 THAI BEEF SALAD

1kg rump steak,
Quarter cup coriander leaves,
2 cloves garlic,
Small piece grated ginger,
2 TBS soy sauce,
2 TBS fresh lime juice
, 1 TBS Fish Sauce,
1 TBS of brown sugar,
1 Red onion sliced,
2 Red chillies sliced,
Half cup mint leaves
Lebanese cucumber, spinach, tomatoes, extra chillies (or your choice of salad vegies in the qty you need).

BBQ steak until medium rare, allow to rest and cool.
Mix coriander, garlic, ginger, soy, lime juice, fish sauce, sugar and chillies in a blender or food processor until fairly smooth.
Slice beef as thinly as possible. Pour dressing over meat.
Toss the salad ingredients including extra sliced chillies if required. Put evenly only serving plates or onto one large serving dish. Top with meat and dressing.
Garnish with more mint and coriander.
This serves four with steamed rice. It's got bite but is not too hot. Just adjust the amount of chillies to your taste.
